Wow, it's been a while since I wrote a blog. Many friends and customers have been asking me about Keto friendly baking. I have been on the Keto diet for a year now and lost 29 lbs. Moving into a maintenance mode now but I wanted to share some of my favourite treats. Sometimes the hardest thing to give up are the sweets and cause us to fall off the wagon. Once I found these fabulous options I could stay motivated to meet my goal.
First of all my favourite brownies:
2/3 cup honey
1/2 cup melted butter or coconut oil
1 Tbsp vanilla extract
1 cup almond flour (best price is at Costco)
1/2 cup cocoa powder
1/4 tsp baking soda
1/4 tsp sea salt
Beat together the first four ingredients. Mix the dry ingredients together and then add to the wet mixture. Pour into a prepared 8X8 baking pan (lined with parchment is the best) Bake at 350o for about 25 minutes. Yummy!
And what Afternoon Tea would be complete without a scone option so here it is...a little different texture so I spread my sugar free jam on top instead of trying to cut it into two layers.
2 cups Almond Flour plus 1/2 cup coconut flour
1/3 cup erythritol or xylitol or monk fruit sweetener
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
Mix dry ingredients together
Cut in 1/4 cup of cold butter (or cold coconut oil)
Beat 3 eggs with 1/3 cup almond milk (or hemp milk or heavy cream) plus 1 tsp of vanilla extract
Mix into dry ingredients. Add 3/4 cup chopped toasted walnuts if desired or another flavouring such as lemon zest, dried berries...Form into a ball and pat to about 1/2 inch thickness circle. Cut into 8 wedges, spread apart on a parchment or silicon lined pan and bake at 375o for about 20 minutes.
I also make a sugar free freezer jam and my mock devon cream by whipping cream of coconut and artificial sweetener. You can also use whipping cream plus cream cheese and artificial sweetener if you don't have a dairy intolerance.
